Achari Bhindi Recipe: Tangy and Spicy Okra Dish

Achari Bhindi聽is a tangy and spicy Pakistan vegetarian dish made with okra (ladyfingers) and pickling spices. The dish is cooked in a tomato-based gravy and flavored with a blend of aromatic spices. Achari Bhindi is best enjoyed with聽rice聽or naan bread.

Ingredients:

路聽聽聽聽聽聽聽 1/4 kg Bhindi

路聽聽聽聽聽聽聽 2 tbsp oil

路聽聽聽聽聽聽聽 1 medium size chopped onion

路聽聽聽聽聽聽聽 1 medium size chopped Tomato

路聽聽聽聽聽聽聽 1 tsp kalonji

路聽聽聽聽聽聽聽 4-5 crushed garlic cloves

路聽聽聽聽聽聽聽 3 tbsp curry leaves

路聽聽聽聽聽聽聽 1/2 tsp Cumin powder

路聽聽聽聽聽聽聽 1/2 tsp coriander powder

路聽聽聽聽聽聽聽 1 tsp salt

路聽聽聽聽聽聽聽 1 tsp Red Chilli powder

路聽聽聽聽聽聽聽 1/2 cup curd

Method

In frying pan, add fenugreek seeds, carom seeds, coriander seeds, fennel seeds, nigella seeds, cumin seeds, mustard seeds and dry roast until fragrant. Let it cool. In mortal & pestle, add roasted spices and crush coarsely. Add red chilli crushed, salt, mix well & transfer to a small bowl. Add lemon juice, mix well & set aside. Cut okra from top and bottom. Slit okra with the help of knife and stuff with prepared spice mix. In wok, add聽cooking oil and fry stuffed聽okra for 2-3 minutes & set aside.
